Grilling radishes gets them tender on the outside while leaving just a bit of refreshing crunch on the inside.
Ingredients
- 16 radishes
- bamboo skewers, soaked
- cooking spray
- 1 tsp garam masala blend
- ½ cup fresh cilantro
- 1 clove garlic
- ⅓ cup plain yogurt
- 2 tbsp olive oil
- 2 tsp red wine vinegar
- ½ tsp ground coriander
Steps
- Set grill to medium. Trim radishes and cut into halves. Thread 4–5 radish halves onto skewers. Coat with cooking spray. Sprinkle with seasoning, salt, and pepper.
- Place skewers on grill and cover. Cook 8 min., until mostly tender, turning occasionally.
- Meanwhile, in a food processor, pulse the cilantro and garlic until finely chopped. Add the yogurt, oil, vinegar, and coriander. Pulse until smooth. Season with salt and pepper. Serve radish skewers with yogurt sauce.
